Bake 52: Tres Leches Cake

This week's recipe was for Tres Leches Cake. I had heard of this cake before since Nick served his mission in Chile. We usually have a can of Dulce de Leche on hand which Nick sometimes eats on sliced bread, and I knew he would love the cake. I opted to half the recipe and used an 8x8 pan.
There were a few things that went awry. First of all, if you've read Jenn's blog, you know we both had a problem with the sweetened condensed milk overflowing in the microwave. I transferred mine to the stove and was much happier with the process after that.

I couldn't believe how runny the milk mixture was, though, so I had to call my sister just to make sure hers was also that thin. I couldn't imagine pouring that on top of a cake. I was picturing more of a thick, caramel texture like the Dulce de Leche. She assured me that hers was also runny, so I poured it on.

Finally, there was the topping. I do not like whipped foods much. No whipped cream for me, thanks! When it comes to making it, though, I've never had a problem. Mine was looking just beautiful at first, but it wasn't getting peaks. So, I continued to whip it, waiting for the peaks to form, and instead it turned into this:
How gross is that?! Ugh. I have no idea what happened. Somehow things started to separate and I was left with a watery puddle with chunks. Without any more cream on hand to start over with, Nick told me the cake would taste just fine without it. Any insight into what could have caused that?

Now for the final product, all sliced up and ready to eat. . .
or at least for Nick to eat. I still couldn't get over the vision of the cake swimming in milk, so I didn't have any desire to try it, no matter how good it smelled. Pathetic, I know, but aversion to textures/new foods is like a family curse. So, after I read that Jenn tried it and really liked it (and that she hated the topping, which meant mine would taste even better) I went to the fridge to bite the bullet - I mean cake - and see what I thought. If she could do it, so could I!

Well, I could have if there had been any cake left to try. It was gone. Vanished. Completely consumed by one-who-shall-remain-nameless-but-you-know-who-it-is-anyway. Apparently the cake is THAT good.

Beautiful! I think you were on your "whey" to making butter! Was the cream cold and the bowl, too?

My cream did that the first time too (it was quite the night last night) I attributed it to me leaving it unattended and whipping too much. I started over and whipped it just until it looked like I could spread it on the cake and it was fine. Maybe that's what it was? Not really sure. Anyway, the cake looks great! So funny that Jenn trying it made you have the courage to. Sorry you didn't get the chance, it really is that good though. :)

I LOVE tres leches cake! I don't use whipping cream, I just top it with strawberries and it's delish!!

I believe that if I was at your house, it would have been me who ate the entire cake!!! It looked divine!! (MUCH tastier than Greg's and my wedding cake a year later, right? Sorry you guys were involved in that fiasco.) You are such a fancy chef, and I love hearing about the delicious things you make!

Hey, what mission did your husband serve in? I went to Chile too. Santiago, North... but I had a brother in Santiago South. Such a GREAT place. Such GREAT people.
