Magazine Monday: Desserts

This week I made two desserts from recipes found in a magazine and online. The first is easy peppermint brownies.
This was in an article about what to do with left over Halloween candy.

You simply mix up a box of brownie mix, and pour half of it into a greased 8x8 pan. Then, place 16 mini York Peppermint Patties on top and pour the rest of the brownie mix over it.


Yummy! It adds a subtle mint flavor to the brownies.Next up was a way to use up our leftover pie crusts from the cran-strawberry pie Nick made. Follow this link Nestle Toll House Chocolate Chip Pie for the recipe, or look for it on the back of your chocolate chip package. We decided to try mini pies instead of one large pie.

Step 1: Make the modified cookie dough. Nick thought it had too much chocolate, so you might want to put less in - unless you're like me and love the extra chocolate!
Step 2: Spray muffin tins and add a strip of parchment paper to easily pop them out after they're cooked.
Step 3: Roll out your pie crust (you can use store bought if you prefer), and cut out circles. I used a Ziploc container I had on hand.
Step 4: Press the pie crust into the muffin tins.
Step 5: Fill the pie crusts with cookie dough.
Step 6: Bake as directed. All the chips drop to the bottom, so it was suggested to place more on top a minute or two before taking them out, but it's not necessary.
Serve them warm with a scoop of vanilla ice cream for a fun treat!
