Think Big

Nick went through a phase (I hope) in October where everything was BIG!

First, he went out and bought the largest pumpkin he could find at Macey's. We still have it in our freezer to make pies and cookies with.

Then, he walked through the door with a big box a few days later. Apparently they had a sale on chicken, but in order to get the good price, you had to buy 40 pounds of it. He did--and spent the next 4 hours cutting and preparing it to be frozen. Any good chicken recipes out there for us to try?

Trafalga in October

In honor of finally getting together with Diane and Jaren again tonight, here are some photos of a time in October when we went to Trafalga. This is something I definitely recommend to anyone wanting to go out for a fun time (when it's warmer!) For $20 a couple, you can do miniature golfing, batting cages, race cars, and have dippin' dots ice cream. A great deal!

Nick and Emily--we just can't get away from school!

A very tricky course on which Diane got a

HOLE-IN-ONE!!!!

Watch out you little baseballs, here we come!

I was tagged by a few people months ago, so to continue my ~hopefully~ more frequent blogging, here are 3 facts about me (I know the tags called for 7, but you're lucky to be getting 3):

1. One of my favorite appetizers on Sundays is raw potatoes. I love to sprinkle a little salt on and eat a whole potato when I am done peeling them for dinner. Mmmmm, starch!

2. I like count-down chains. Currently I have a countdown chain for the weeks left in school (color coded by month) as well as one for the teaching days in each month.

3. Lately I have been hooked on Star Trek Voyager. Nick and I record two episodes every day and watch them later on. Gotta love it!

We're Back!!!

Okay, so I have had enough comments from you all about my non-bloggingness that I am going to force myself to blog every day this week to try getting caught up on what Nick and I have been up to during the past 3-4 months (okay, so it really HAS been a long time!)

Let's talk about this last week to get started:

I had a very crazy week at school and couldn't wait for the long weekend. I got sick on Friday (for what seems like the 100th time since school started, despite gallons of germ-x and Lysol) and spent the weekend recovering.

Nick went to a mock court competition where 6 BYU teams and 4 UofU teams competed against each other. Nick and his partner won 2nd place of the BYU teams and will now be preparing to compete in the regional competition in March in San Fransisco. I'm very proud of him.

Bunny (for those of you who know him) is doing great! Our poinsettia plant, on the other hand, has nearly died twice!
